Here’s a recipe created by my Aunt Nora. It’s “delicious, easy and freezes well if you are lucky enough to have any left.” That’s a quote from my Mom, who put this recipe in her homemade cookbook.

MEXICAN SOUP

1/1/2 lbs. hamburger (browned and drained)

1 medium onion, chopped

2 medium cans diced tomatoes

1 can ranch beans (or pintos)

1 can Rotel

16 oz. Velveeta Cheese

1 can corn with juice

1 can chicken broth

Heat all until cheese melts.

Yep. That’s all there is to it!
